Lemon cupcakes!!!

Yum scrum these look delicious!!!


  1. Preheat the oven to 180c
  2. Line a 12 cake tin with fairy cake cases
  3. Beat the butter and the sugar until soft then add the lemon zest
  4. Slowly stir in the whisked eggs
  5. Next fold in the flour until all smooth and combined
  6. Use teaspoons to divide the mixture into the cases
  7. Bake for 18-20 mins until the cakes are golden and springy when you touch them.
  8. Cool the cakes for 10 mins on a wire rack

While you wait for the to cool make the icing:

  1. Beat the butter until soft
  2. Gradually add the icing sugar, lemon zest and juice
  3. Spread the icing onto the cakes ( TIP-when spreading use a back of a spoon)
  4. DECORATING TIME!!!!!!!!!!!!!!!!
  5. And enjoy:)


140g of unsalted baking butter

100g of caster sugar

zest of 1/2 lemon

2 eggs

140g of self-raising flour

To decorate:

85g of butter softened

175g of icing sugar

zest and juice of 1/2 lemon

sprinkles for decoration

Lemon curd cake with no butter!!!


The scrumptious lemon curd cake without butter!!!!!!

This fabulous recipe is bound to help you into making a delicious, lemony cake with curd dribbled on the top and in the middle.


1/2 cup of milk

1 cup of plain flour

1 1/2 tsp of baking powder

2 tsp of grated lemon

3 eggs

3/4 cup of sugar



1.Preheat the oven to 180°c

2.Heat through the milk in a microwaveable pot or bowl until bubbling at edge.

3. Sift flour and baking powder

4. In a small bowl mix the eggs until light and fluffy. Gradually add the sugar until the mixture is smooth.

5. Mix in the flour and baking powder, which you prepared earlier, until the mixture is smooth.

6. Add the warm milk and lemon zest.

7. Next, pour the mixture into an ungreased tin/cake pan (about nine inches)

8. Now put it in the oven for about 30minutes. Don’t forget to put the timer on!!!

9. Now the most important part… enjoy your brilliant cake!!!
